Ingredients:
- 1 cup flour
- 1 tsp baking soda
- 1/4 cup peanut butter
- 1/4 cup cooking oil
- 1 cup shredded carrots
- 1 tsp vanilla
- 1/3 cup honey
- 1 egg
Directions:
- Preheat oven to 350
- Grease 9 inch square or round cake pan
- Mix the flour and the baking soda in a large bowl
- Add the remaining ingredients and mix well
- Pour into prepared pan and bake for 30 minutes
- Let cool for 2 minutes
- remove from pan and finish cooling on rack.
- Frost and serve
Frostings
Cinnamon FrostingCombine the following ingredients and blend thoroughly
- 12 ounces nonfat cream cheese (room temperature)
- 3 tsp cinnamon
- 1 tsp vanilla
- 1 tsp honey
Carob Frosting
Combine the following ingredients and blend thoroughly:
- 12 ounces nonfat cream cheese (room temperature)
- 3 tsp carob powder
- 1 tsp vanilla
- 1 tsp honey
Banana Carob Frosting
Combine the following ingredients and blend thoroughly:
- 2 cups mashed ripe banana
- 1 Tbs butter
- 6 Tbs carob powder
- 2 tsp vanilla
- 3 Tbs Unbleached flour
- 1 tsp cinnamon
