Peanut Butter Pooch Cake

(i need to scan in the picture of the cake. I'll do that when i get home tonight...)

Ingredients:
  • 1 cup flour
  • 1 tsp baking soda
  • 1/4 cup peanut butter
  • 1/4 cup cooking oil
  • 1 cup shredded carrots
  • 1 tsp vanilla
  • 1/3 cup honey
  • 1 egg
Directions:
  1. Preheat oven to 350 
  2. Grease 9 inch square or round cake pan
  3. Mix the flour and the baking soda in a large bowl
  4. Add the remaining ingredients and mix well
  5.  Pour into prepared pan and bake for 30 minutes
  6. Let cool for 2 minutes
  7. remove from pan and finish cooling on rack. 
  8. Frost and serve

Frostings

Cinnamon Frosting
Combine the following ingredients and blend thoroughly 
  • 12 ounces nonfat cream cheese (room temperature)  
  • 3 tsp cinnamon   
  • 1 tsp vanilla  
  • 1 tsp honey


Carob Frosting
Combine the following ingredients and blend thoroughly:
  • 12 ounces nonfat cream cheese (room temperature)  
  • 3 tsp carob powder 
  • 1 tsp vanilla  
  • 1 tsp honey


Banana Carob Frosting
Combine the following ingredients and blend thoroughly:
  • 2 cups mashed ripe banana  
  • 1 Tbs butter  
  • 6 Tbs carob powder  
  • 2 tsp vanilla  
  • 3 Tbs Unbleached flour  
  • 1 tsp cinnamon
